For my sister's 23rd Birthday I decided to treat her with a homemade carrot cake. This was probably the first time (can't believe I am saying this) that I have made a cake- from scratch all by myself, but wasn't it fun! Dedicating your entire day to making/baking/icing/decorating a cake excited the heck out of me as well as that fact that the joy I saw on her face when she first saw it definitely made the day worth it! First off our oven is literally ridiculous with its cooking times and heat distribution. The recipe said cook for an hour- I knew it meant probably 45 minutes in the family oven (which is probably older than me). It took about 30 minutes for me to notice an odd/ burnt.. smell coming from it and as I opened it to my disgust was the side facing the end was a pitch, burnt, charcoal colour. This meant I spent some time slicing off the one side that was burned, while remaining to keep it in a circle shape. Nonetheless it turned out A-okay. Mum loved devouring half of the cream cheese icing- and quietly so did I....
I decided to decorate the heck out of it with chopped walnuts and sliced apricots, and for the record it tasted GOOOOOOOOOOOOD! I've got all summer to improve hehe.
