Easy Portable Summer Eats.

As we venture on into the weekend, what better time than now to prep for a springtime picnic! The weather is slowly- but surely starting to warm up so my dear friend and I are heading on a road trip to Hanmer Springs for the day that we have been thinking about for months! Finally a day became availble for both of us busy bee's CHAHOO! We plan to shop, swim and of course sightsee along the way. Along with the strawberries, corn chips and humus, we made some more fulfilling meals to keep us energized throughout the day. We roasted in the oven kumara and pumpkin with garlic and lemon olive oil to produced the most mouthwatering flavour I could ever imagine. Once roasted we added chopped up feta to finish this scrumptious summer salad. We also decided to make fresh spring rolls <3 which had coriander, carrots, bean sprouts, cabbage and red pepper in them. Of course for those you can't forget the Soy and Sweet-Chilli sauce! What's great about these meals is that they are both so easy to pack into containers and carry along with you. We plan to walk a wee while before eating, so with these on our backs they will be perfect! Happy weekend lovelies!
