One word, Gingerbread. This post goes out to all the gingerbread obsessed especially around this time of the year! Nothing excites me more than filling the house with the smell that most perfectly describes Christmas. As well as this is has become a tradition to bake gingerbread with my darling sister hannie. I used the Chelsea Sugar recipe which I will post below :)

This recipe was hella easy and only required an ½ hour setting time for the dough in the fridge, although as nobody had time for that I put it in the freezer for 15 minutes! Same thing right? ;) I had just recently bought a cute cookie jar from Living and Giving which I wanted to fill with cookies. So I planned out what cookies I could fit in the jar with the cookie cutters. I did some gingerbread men, love hearts, stars and for some extra wee gifts I did some smaller hearts to pack into gift bags. Once rolled and pressed it was time to cook. They didn't take long that's for sure, only about 8 minutes to be exact! Then I let them cool and placed them in the jar, now whenever we have visitors they can help themselves or my family and I can just end up eating all of them which is what is happening anyway hehehe. Gingerbread that isn't decorated will store for about 4 weeks in a tight lidded jar like the one I have got (reason why I didn’t decorate them heheh) and I think next time I will dip half of the cookies in melted chocolate hmmmmmmm yes, next years goals maybe?

Go and bake some gingerbread! You won’t regret it <3 -Lucy

Recipe is below babes:

Ingredients

  • 2-2½ cups plain flour

  • ½ tsp baking soda

  • 1 Tbsp Gregg's ground ginger

  • 1 cup (220g) firmly packed Chelsea Soft Brown Sugar or Chelsea Dark Cane Sugar

  • 150g butter

  • 1 egg, beaten

  • ½ cup Chelsea Icing Sugar

  • Food colouring & lollies to decorate

Method

  • Preheat oven to 180°C. Line 2 baking trays with baking paper.

  • Sift flour, baking soda and ginger together and place in a bowl or food processor. Add Chelsea Soft Brown Sugar or Dark Cane Sugar.

  • Add butter and rub in with fingertips or pulse in food processor until resembles fine breadcrumbs. Add egg and stir or pulse to mix. If the dough is too sticky, add a little more flour to the mix and wrap in cling wrap. Refrigerate for half an hour.

  • Roll out on lightly floured surface or between 2 sheets of baking paper until 5mm thick, using cookie cutters, cut shapes and place on tray. Form leftover dough into a ball and re-roll and repeat cutting out until all the dough is used up.

  • Bake gingerbread men for 8-10 minutes or until cooked and golden. Remove from oven and cool on baking rack.

  • Make icing by adding a few drops of food colouring and 1 ½ tsp water to the icing sugar and drop a small amount under each spot where you wish to place a lolly.
